Elixir Eats: Radishes and Ribbons.

We have tossed up fresh, tasty veggies to show you how simple it is to create a light and healthy raw alkalising salad, which is refreshing and packed full of nutrition.

Ingredients
1 bag watercress
2 courgettes
8 radishes
vegan pesto
sesame seeds for sprinkling
1 squeezed lemon juice
1 avocado
Himalayan salt and black pepper to taste
makes 2 servings.
Prep
Slice courgettes into ribbons using a Spirliazer or regular peeler.
How we did it
Make a bed of watercress.
Slice courgettes into ribbons using a peeler. Use a high quality Spiralizer if you want to make finer courgetti.
Chop the avocado and the radishes into discs and top onto salad.
Top salad generously with your favourite pesto and the lemon juice then sprinkle with sesame seeds.

ELIXIR TIP: If you want to add more protein to this salad, add some poached egg/ salmon fillet/ organic chicken/ black beans/ chickpeas!
