Elixir Eats: Goji Chip Granola.

Who loves granola? We certainly do, especially when its packed with nutritiously dense superfoods. Dig into this incredibly sweet and satisfying Goji chip granola, loaded with gluten free oats, buckwheat, coconut, goji berries and cacao nibs for a delicious chocolate crunch.

Serve with your favourite nut milk, we used Rude Health Coconut milk. Almond, hazelnut and rice milk are also delicious.
Sprinkle over Coyo, our favourite dairy free coconut yoghurt.
Pop into a little tub and take to work so you can graze.
Serve with fresh fruit, like blueberries and raspberries for a light breakfast
Eat a dessert, crumble over a scoop of vegan ice cream. We love Booja Booja!
Nibble on for a pre work out snack if you want a burst of energy without having a full meal.

Ingredients
DRY
1 cup whole cashew nuts
3 cups oats
1 cup buckwheat groats
1/2 cup chopped brazil nuts
1 cup coconut flakes
1/2 cup pumpkin seeds
1/3 cup goji berries
1/2 cup cacao nibs
1 tbsp cinnamon
1 tbsp nutmeg
WET
4 tbsp coconut nectar syrup
1 tsp vanilla essence
1 mashed banana
1 1/2 cups coconut oil
makes 1 very big batch of granola.

Prep
You will need to preheat your oven to 180 degrees. 160 degrees if using a fan oven. You will also need a large mixing bowl, baking trays and greaseproof paper.
How we did it
1. Mix all of the dry ingredients together into a large mixing bowl. This is a delicious muesli on its own!
2. In a separate small bowl, mash the banana thoroughly with a fork, then add the syrup and vanilla essence so you have a sweet and sticky paste.
3. Melt the coconut oil in a pan until it is fully liquified. Pour the coconut oil and banana mix over the dry mixture in the large mixing bowl. Stir it all up so everything is fully coated.
4. Spread thin layers of granola onto your baking sheets. Bake in the oven at 180 degrees for 20-25 minutes. (160 degrees if using a fan oven). Be sure to keep an eye on it, ovens vary and granola can burn very easily, especially the goji berries! This recipe makes a very large batch, 4 baking trays worth. Simply half the ingredients for a smaller batch.
5. Alternatively, for a raw granola use a dehydrator!

ELIXIR TIP: You can always mix the goji berries and cacao at the end, if you would rather keep them raw.
ELIXIR EXTRA TIP: When you have all the dry ingredients mixed together in the bowl in step 1, you have the perfect muesli! Store in a large glass jar and serve with almond milk and blueberries, the best!
