Elixir Eats: Matcha Warrior Bites

Protein balls, energy balls, bliss balls, power balls, what ever you like to call them, these ones pack a punch of protein and sweet flavour with all the benefits from matcha green tea! The great thing about making your own health conscious snacks is that they contain far more nutritional value than regular cereal bars, as well as being fun, quick and easy to make. Nuts and dates are a fantastic plant based source of protein, fibre and healthy fats, keeping you satiated and energised for hours! You can also get creative by rolling them into your favourite superfoods. In this recipe we used hemp seeds, matcha powder and raw cacao powder.

Ingredients

1.5 cup desiccated coconut

2 tsp matcha powder - we use Clear Spring

1 tsp cinnamon

1 serving natural warrior blend (21g)

24 pitted medjool dates

2 cups ground almonds (250g)

1/4 cup melted coconut oil

Superfood coating

matcha powder - for the matcha expert, this is quite strong!

hemp seeds - for a nutty taste and texture.

cacao powder - for the chocoholic.

baobab powder - for a citrus zing.

acai powder - for a burst of antioxidants.

chia seeds - for a little crunch.

makes approx 30+ matcha bites

Prep

You will need a high speed food processor and separate bowls or plates to roll the bites in for coating.

How we did it

1. Put the coconut, matcha, cinnamon, warrior blend and ground almonds into the food processor and blitz for a few seconds so they are well mixed.

2. Now add the dates and melted coconut oil and continue to process them.

3. Once a dense sticky mixture is formed, roll them into small balls, and place them in a bowl or plate.

4. You can leave them as they are and set in the fridge, or you can roll them in your favourite superfood toppings. For example, fill a bowl with roughly 1/4 cup hemp seeds and dip the bites in and evenly coat them.

5. Set in the fridge or freezer and enjoy!

ELIXIR TIP: To ensure you’re never caught without something healthy to keep you going, pop portions of these bites into sandwich bags and store in the freezer for convenient grab and go snacks!
