Elixir Eats: Paprika Pumpkin Seed Hummus

We thought it was about time we showed you our version of a very popular savoury side, hummus!

Hummus is a traditional middle eastern dish, made with chickpeas and tahini. CHICKPEAS are a fantastic vegetarian source of protein, they are rich in Calcium for strong bones and high in Iron for maintaining healthy hair, skin and nails.

Tahini is sesame seed paste and is the delicious ingredient needed for making hummus so nice and creamy. Sesame seeds are high in Zinc, B Vitamins and Vitamin E. Sesame seed oil is also an amazing antioxidant, so all in all a brilliant skin food.

Now let's not forget the power of PUMPKIN SEEDS! One of our favourite sources of ZINC! Zinc is critical for .

RED PEPPER is a mouth watering veggie bursting with lots of Vitamin C, perfect to pair with the Chickpeas because Vitamin C is needed for the proper absoption of Iron! Vitamin C is also vital for skin cell renewal, promoting a bright and radiant complexion!

So lets get to it!

Ingredients

230g (one drained pack) organic chickpeas

1 small red pepper

freshly squeezed juice of 1 lemon

3 tbsp tahini

2 tbsp virgin olive oil or favourite omega oil - we like Udo's

2 cloves garlic

3 tbsp pumpkin seeds

1 tsp apple cider vinegar

1 tsp smoked paprika

1/2 tsp oregano

Himalayan salt and lots of black pepper to taste

makes a substantial amount of hummus dip - perfect for sharing.

Prep

You need a good food processor to blend all of the indredients into a paste.

How we did it

1. Drain and rinse the chickpeas and put into the food processor.

2. Add all the remaining ingredients and blitz away until you achieve a nice and smooth hummus!

3. Serve into a bowl and use to accompany leafy green salads, a dip for vegetable sticks or spread on gluten free toast and top with tomatoes! Delicious!

ELIXIR TIP: You can flavour hummus in so many ways, try adding sun dried tomatoes or pesto for an extra burst of flavour and a fun twist!
