Sometimes there is nothing more comforting than a warming bowl of goodness for breakfast on a cold, dark wintery morning!

Chia puddings are such a popular and versatile meal, which can be enjoyed with many flavours. We find them so nourishing, filling and delicious.

Our warming golden chia pud pud is fit for royalty, with sweet pistachios, creamy coconut milk, golden berries, ripe banana, bee pollen and the almighty QUEEN of spices, TURMERIC!

Chia pudding is usually served cold, however during these chilly winter months it is nice to be able to enjoy something that is warmed up. What's great is that this recipe can still be eaten cold, and can be made the night before for breakfast. Simply pop all the ingredients, apart from the banana, in a sealed jar over night in the fridge! It will be all ready to eat in the morning and all you need to do is top it with some fresh fruit.

Ingredients
PUDDING
4 tbsp chia seeds
200ml coconut milk
1 small handful of chopped pistachio nuts
1 tsp mixed spice (cinnamon, cardamom, ginger, cloves etc)
1 tsp organic turmeric powder
1/4 tsp black pepper
pinch of himalayan salt
1 tbsp rice malt syrup
TOPPING
1 small very ripe banana
golden berries for decorating
sprinkling of bee pollen
a dollop of coconut yoghurt - we like Coyo
makes 1 glistening golden chia pudding.
Prep
No snazzy blenders needed this time, just a small saucepan.
Chop your banana and have your toppings at the ready.
How we did it
1. Mix the chia seeds and spices in a bowl.
2. Pour your coconut milk into a saucepan and put on a very low heat.
3. Add the chia seed mix into the coconut milk and stir well.
4. Continue to heat gently, stirring as the seeds swell up, do not let it boil, you don't want to destroy the healthy nutrients.
5. Once the seeds have absorbed all the milk and it is a lovely pudding consistensy you like, stir in the pistachios and rice malt syrup and serve it all up in your favourite bowl.
6. Top with banana, bee pollen, coconut yoghurt, golden berries and ENJOY!


ELIXIR TIP: If you need it a little sweeter, you could use some juicy medjool dates, coconut palm sugar or for a sugar free option, try using stevia.
