Elixir Eats: Brazil Butter Fudge Cups

If you love all things sweet, chewy and fudgy, then we certainly have the treat for you! These totally melt in the mouth fudge cups are a selenium sensation, packed with delicious medjool dates, coconut butter and selenium rich brazil nuts!

BRAZIL NUTS are full of fibre and magnesium, we also love that they contain a super nutrient called selenium. Just a couple of brazil nuts a day will give you a generous dose of selenium and Vitamin E. All essential for a healthy heart and gorgeous skin. Who doesn’t want radiant and hydrated skin?

1 brazil nut contains 123% of the daily requirement of Selenium, best get munching!

Ingredients

1 cup whole brazil nuts + 16 extra for garnishing.

1/2 cup coconut oil

1 block of coconut butter (biona)

10 medjool dates

pinch himalayan salt

1 tsp nutmeg

1 tsp vanilla essence

1 tbsp maca

1 tbsp lucuma

3 tbsp raw cacao powder

makes 16 mouth watering fudge cups

Prep

You will need: small cupcake cases, a baking tray or cupcake tray to hold them and a food processor.

How we did it

1. Put the brazil nuts into your food processor, blitzing them until they start to form a nut butter! This may take a few minutes.

2. Now add the remaining ingredients, apart from the cacao powder.

3. Squish the mixture down into the cupcake cases, filling them about half way.

4. Now add the cacao powder to the remaining mixture left in the food processor.

5. Whizz away so the cacao is mixed in, then fill up the rest of the cupcake cases.

6. Press down a brazil nut on top of each cup. Continue to shape cups, pressing the mixture down until you are happy with their appearance.

8. Freeze for at least 30 minutes, or pop into the fridge for an hour so they fudge cups can set thoroghly.

ENJOY!

ELIXIR TIP: If you want to add a bit of crunch to your fudge, you could always add some cacao nibs to the mixture! This will turn it into a healthy cookie dough!
