Ombanana Cookies.

Another week gone, another FOODIE FRIDAY! We found some very ripe bananas and Ombar chocolates in our kitchen and they were just asking to be made into something special. Behold our Ombanana cookies, every cookie monsters dream! The Elixir kitchen smelt so heavenly when these little beauties were baking.

These cookies are firm on the outside and soft in the centre, with a delicious hint of banana! As well as being generously filled with chunks of rich, smooth, Ombar chocolate and crunchy cacao nibs! Most importantly, they are a great substitute to your regular supermarket chocolate chip cookies, which are usually processed and loaded with gluten, dairy and heaps of refined sugar. Instead, they are full of healthy fats, fibre and protein from the Quinoa flour!

This recipe makes a very big batch of scrumptious cookies, perfect for sharing with friends and family for afternoon tea!

Ingredients

2 small very ripe mashed bananas

1 cup melted coconut oil

3/4 cup coconut palm sugar - we used biona

2 1/2 cups quinoa flour

1 tsp vanilla essence

pinch himalayan salt

1 tbsp cinnamon

3 bars of Ombar chocolate broken into small chunks - we used Ombar 90%

1/4 cup cacao nibs

makes 30 small cookies, or 20 large ones ;)

Prep

- Line 2-3 baking trays with greaseproof baking paper.

- You will also need a large mixing bowl wooden spoon and spatula.

- Preheat your oven to 170 degrees.

- Mash the bananas into a smooth puree.

How we did it

1. Mix the mashed banana, melted coconut oil, coconut sugar, cinnamon, salt and vanilla in a large mixing bowl. Stir together well using sing a wooden spoon.

2. Transfer mixture into a mixing bowl. Gradually add the flour, folding it in and rubbing the mixture together between your fingers and thumbs.

3. Now everything is thoroughly mixed together, add the cacao nibs and Ombar chunks and evenly distribute throughout the mixture, using your fingers and thumbs.

4. Form the mixture into cookie shapes and arrange them with a little space around each one onto the baking trays. We like to make sure there is a good couple of chunks of chocolate in every cookie! Yum!

5. Pop into the oven for approximately 10 minutes. They cook extremely fast, so keep and eye on them. They want to be just going golden brown. Once they are baked, immediately remove them from the tray onto a cooling rack using a spatula. You don’t want to burn your fingers!
