Say hello to healthy, beautiful and radiant skin! These little jewels of nutrition are the perfect skin food and on the go snack, packed with Omega-3 rich chia seeds, coconut oil and vitamin bursting goji berries!
This is a really easy recipe to make. It makes a large batch of raw mixture, which you can freeze in convenient grab & go portions for the weeks ahead! No more reaching for refined sugary snacks when you have these at hand. We think they are the perfect elevenses or 3pm pick me up!

We also put in a bit of rooibos matcha powder, because we love the earthy taste and powerful antioxidant properties of rooibos tea!

Ingredients
250g cashews nuts (can be replaced with almonds)
1/4 cup coconut oil
3/4 cup goji berries
4 tbsp chia seeds
20 medjool dates
1 tsp cinnamon
pinch himalayan salt
1 heaped tsp rooibos matcha powder (optional)
extra chia seeds and goji berries for decorating.
makes a large batch of raw mixture to make into any size bites.
Prep
You will need a food processor, a chopping board and greaseproof paper or cling film.

How we did it
1. Ground the cashews in a food processor, along with the himalayan salt, rooibos matcha, chia seeds and cinnamon.
2. Add the dates, goji berries and coconut oil and continue to blend together.
3. The mixture should start to become smooth and sticky. Once it is a consistency you like, you are ready to make into shapes.
4. Line a chopping board with some greaseproof paper or cling film and press the mixture onto the board, forming a large rectangle.
5. Sprinkle your decorations over the top then put into the fridge or freezer to set. Once the mixture is nice and firm, cut into little gems, triangles, squares, cats, stars, whatever your creativity calls!


ELIXIR TIP: You can also roll these into bliss balls and coat in chia seeds or coconut for a fun and delicious alternative!
