Elixir Eats: Hemp Seed & Rocket Pesto.

We LOVE pesto! It’s savoury, creamy and packs a powerful punch. Pesto consists of basil, a deliciously aromatic herb bursting with essential flavonoids. These are antioxidants which protect your cells from oxidative damage. This Omega rich hemp seed pesto is exactly what you need for enhancing flavour to your favourite dishes, as well as benefiting your health.

Ingredients

4 tbsp hemp seeds

100g pine nuts

1 bunch (31g pack) fresh basil leaves

1 handful rocket leaves

2 cloves garlic

1 tbsp dried oregano

8 tbsp UDO's Choice omega oil

juice of 1 lemon

himalayan salt and black pepper to taste

pinch cayenne pepper

makes 2-3 servings of pesto

Prep

You will need a good blender or food processor.

How we did it

1. Simply add all of the ingredients into a food processor or blender and blitz until you smooth or when you reach the desired consistency. The ingredients break down very easily, it should only take a few seconds!

2. Enjoy! If you are not eating all of this fresh, be sure to store in a sealed glass jar in the fridge. Use within 3 days.

ELIXIR TIP: If you would like a dairy free ‘parmesan’ alternative, add 2 tbsp nutritional yeast for a vegan friendly cheesy flavour!
