Elixir Eats: Superfood Nibble Mix

We are all for encouraging making healthy choices when it comes to snacking, which means being mindful about what we are putting into our body. Munching on the right things are the best way to manage sufficient energy levels, eat a variety of nutrients and maintain a healthy weight. Snacking on highly processed sugary snacks may lead to a sluggish metabolism, poor digestion, problematic skin and weight gain. This nibble mix is one of our go to super snacks, crammed with our favourite superfoods to keep you satiated for much longer. This is because they are full of protein, healthy fats, fibre, vitamins and minerals. Having a snack like this is perfect to have on hand for when hunger strikes or if you need a boost of energy to see you through your day.

  • Use as a delicious breakfast topping, such as your favourite yoghurt, smoothie bowl or porridge.

  • Keep it with you in your hand bag or work bag so you are always prepared.

  • Perfect for 11am or 3pm munchies.

  • Decorate your baking or use in flapjacks.

  • Get organised and make in a large batch for the weeks ahead.

Ingredients

1 cup hazelnuts

1 cup chopped brazil nuts

1 cup pumpkin seeds

1/2 cup sunflower seeds

1 coconut chips

1/2 cup cacao nibs

1 cup goji berries

1 cup mulberries

makes 1 large batch of nibble mix

Prep

You will need a large mixing bowl and containers of your choice, this could be jars, Tupperware boxes or sandwich bags.

How we did it

1. Combine all of these wonderful superfoods into a large mixing bowl, mixing with your hands or a spoon so everything is evenly distributed.

2. Pour into your favourite containers and happy snacking!

ELIXIR TIP: We recommend storing in a large sealed glass jar, this keeps the mix fresher for longer.
