Elixir Eats: Mulberry Bee Bark.

White chocolate or dark chocolate, which is your favourite? We love making raw chocolate treats because they are so easy, delicious and contain very little ingredients, unlike highly processed brands of chocolate which usually contain lots of dairy, additives and refined sugar. Dairy for many people can cause inflammation and irritation to the gut. Sugar also has a major impact on digestion, hormones, skin health, weight and so much more.

Let us show you how fun and easy it is to make your own healthy chocolatey indulgences! This luscious, chewy, white chocolate bark is free from any nasty artificial colours and preservatives, but loaded with healthy fats, fibre and protein.
Cacao butter
is the cold pressed oil (fat) obtained from cacao beans
Raw and organic
0g carbohydrates - 99.9% fat. (an unrefined, healthy fat)

This is a great recipe to make to meal prep sweet treats for the week ahead. No fancy moulds needed this time, you can simply use a baking dish. This Bark is also fun to decorate, you can get creative with various toppings. We like to sprinkle our favourite superfoods on for added nutritional value and flavour. One of which is Bee pollen, an incredibly delicious and nutrient dense superfood. Check out last Wednesday’s blog post about Bee Pollen HERE. We also have hemp seeds for protein and gorgeously sweet mulberries to give this bark an indulgent and chewy texture!

Ingredients
CHOCOLATE
300g raw cacao butter
3 heaped tbsp lucuma powder
1 cup ground almonds
pinch himalayan salt
beans from 1 vanilla pod
1 tsp vanilla essence
1/4 - 1/2 cup brown rice syrup (however sweet you like it)
1 tbsp shelled hemp seeds
1 tbsp bee pollen
1 small handful white mulberries
1 tbsp cacao nibs
TOPPINGS (roughly 2-3 tbsp of each)

makes one very large slab of bark
Prep
You will need a wide shallow baking dish, lined with cling film or foil, a saucepan and large glass bowl.

How we did it
1. Gently melt the cacao butter and himalayan salt in a glass bowl over simmering water. You do not want the water to be boiling like mad as we don’t want to overheat the chocolate.
2. Once the butter has melted into a liquid, add the lucuma, ground almonds and vanilla and rice syrup, stirring well to remove all lumps. Add the Bee pollen, mulberries and cacao nibs for the extra texture and crunch in this chocolate. It will start to become quite thick.
3. Evenly spread the chocolate mix into the tray and sprinkle all those magical superfoods over the top.
4. Pop into the freezer to set, this is much faster than the fridge. We are quite impatient when it comes to chocolate!
5. Once your chocolate slab is fully set, break or cut into pieces!

ELIXIR TIP: If you prefer a richer chocolate, simply add 3 tbsp of raw cacao powder for a darker chocolate!
